Description : HEAD BAKER The Forest Bakehouse is a modern and well equipped workers’ cooperative bakery on the edge of the Forest of Dean in rural Gloucestershire. Since its beginnings in 2013 the Bakehouse has enjoyed continued and significant growth to meet increased demand year on year and is totally committed to delivering high quality, handcrafted, delicious and nutritious bread and bakes to its community.Our Bakehouse now seeks a highly motivated individual to take on the role of Head Baker and take this thriving little business to the next level.This is a new and senior role within our small dedicated team and you will have direct responsibility for all bakery production from sourdough to viennoiserie and everything in between.We are looking for an ambitious and thoughtful person who will take an interest in the community it serves and take our person focused business in an exciting direction, building on its already popular range of high quality baked products.We are looking for someone who will be keen to participate in all aspects of our business operation, including: hands on baking; liaising with local producers; sourcing the best ingredients; to costing; budgeting; recruitment; staff appraisal, and social media.You will have lots of experience with long fermentation doughs and UK grown grains and have an interest in agroecology and milling.As a workers’ cooperative you will be very involved in all decision making. You will have the necessary experience and confidence to show strong independent working skills as well as a real desire to lead and be a part of a team.Passion, creativity, drive and humour – bring it all with you!! No night baking.Earliest start 6.30am. Bakery shifts finish by 3pm. No operation on Sundays or Mondays. Great staff lunches, bread and coffee!!HEAD BAKERJob SummaryTo lead and inspire a team of bakers producing high quality, long fermentation sourdough breads, a range of sweet and savoury pastries and counter/takeaway items.Duties and Responsibilities To manage and oversee, from start to finish, the production of all baked goods at The Forest Bakehouse. To include:ManagementEffective team management throughout all sections of The Bakehouse.Close liaison with the General Bakery Managers to ensure smooth and efficient running of the business.Managing stock levels, including compiling and placing stock orders.Maintaining efficiency during periods of high demand.Prioritising and managing daily work load using own initiative.ProductionWeighing out of ingredients for all recipes, including dough and pastries.Mixing of doughs, using natural starters and long fermentation methods.Scaling and shaping of doughs.Caring for sourdough starters.Working with deck oven and programming.Pastry work, including lamination.Preparation of counter items such as cakes, pizza, tarts.Quality control of all products.Front of House and Community EngagementCounter support when required.Maintaining high standards of customer service with positive attitude.Dealing with customer enquiries and orders, including recording and reporting as appropriate.Helping manage customer orders and think ahead to production requirements.Hold friendly informative discussion with customers regarding the benefits of long fermentation and the full Bakehouse range of goods, all of which are made from scratch from ingredients that are consciously sourced.Being familiar with, and promoting, the ethos of The Forest Bakehouse and sharing the passion of good food, in person and through the main social media channels.Quality and Health and Safety ControlBeing fully aware of The Forest Bakehouse health and safety policies and procedures. Ensuring company risk assessments are regularly reviewed and updated.Maintaining high standards of quality assurance, hygiene and health and safety; ensuring compliance with relevant legislation at all times.Looking after equipment and keeping areas well organised and cleaned to highest standard.Business and Staff Development Promoting the business where appropriate.Contributing to the generation of new business.Showing initiative and contributing to the development of new products.Being flexible and willing to learn new skills in order to work in other areas of bakery.Being familiar with current food trends and healthy eating. Work with the whole staff team to identify and address own training needs in order to acquire and maintain a set of skills appropriate to job requirements.The Forest Bakehouse is a developing business and has huge potential therefore further responsibilities and opportunities may emerge such as: increased wholesale range, increased retail items, development of a deli counter, running workshops, pizza events, pop-up events, markets, Real Bread Campaign events, charity events.HOURS OF WORKThis is a full-time post. Minimum 35 hours per week. The hours shall range between 6.30am – 3pm Tuesday to Saturday. Pay dependent on experience.
